French vanilla ice cream 🍨 Ingredients: - 1.5 cups whole milk (360 ml) - 1.5 cups heavy cream (360 ml) - 2 tsp vanilla extract - 4 large egg yolks - 2/3 cup sugar (134g) - 1/8 tsp salt Directions: 1. Chill the ice cream bowl in the freezer for 24 hrs before needing to use 2. Combine egg yolks and sugar and whisk until mixture is smooth and slightly pale yellow 3. Pour milk into saucepan and place over medium heat until warmed 4. Slowly pour about 1 cup of the hot milk into the eggs/ sugar while whisking constantly to temper them. 5. Then pour the tempered egg/sugar mixture into the saucepan with the remaining milk. 6. Return the saucepan to low heat. Stir the mixture slowly and constantly. Keep cooking until the base has thickened enough to coat the back of the spatula and registers 170°F with a food thermometer. 7. Pour the mixture through a fine-mesh strainer set over a bowl. 8. Stir the heavy cream into the mixture 9. Set the bowl over a prepared ice water bath to chill the mixture completely. 10. Alternatively, you can refrigerate the mixture for 3 hours or overnight. 11. Transfer the chilled ice cream base to the bowl of an ice cream machine. Churn until the base has thickened and resembles soft serve. This could take between 20-30 min. 12.
